Tofu scramble Delight
A little lunch I put together 210 calories
Smash very soft tofu up. Get a tofu scramble kit from the store or you can make your own with online recipes using peppers and seasons. Cook over stove with a little bit of water to mix the scramble seasoning kit up if you use the packets or a little olive oil if you decide to do peppers and make your own seasoning.
Put over Ezekiel bread toasted (Earth Balance butter on there lightly)
Add a few slices of avocado or to cut more calories use cucumbers instead, but with avocado your lunch is 210 calories!
